INGREDIENTS
1 large onion
1 can chick peas
1 can brown lentils
1 can tomatoes
2 tbsp curry powder
1 tbsp oil
1 tsp salt
METHOD
- Heat oil, add finely chopped onions and salt, and fry gently until translucent
- Add curry powder and fry for one minute until fragrant
- Add chick peas and tomatoes and cook for a few minutes until chick peas are softer
- Stir in the lentils, adding a bit of water for consistency if desired
- Cook for a few minutes until hot
